1 slice Profusion Organic Protein Bread
2 to 3 chestnut mushrooms, sliced
1 to 2 cloves garlic, chopped
A handful of spinach, chopped
½ avocado, sliced
1 tbsp olive oil
Salt and pepper, to taste
- Add the olive oil, mushrooms and a pinch of salt to a frying pan and cook for 3 minutes.
- Add the garlic and cook for a further minute, then add the spinach and cook until soft.
- Meanwhile, toast the slice of protein bread.
- Assemble the mixture on the toast, add the sliced avocado and salt and pepper to taste.
