We've veganised the ultimate Indian comfort food, aromatic koftas made with our protein-packed burger mix, served with a flamboyant salad and a creamy, vegan dressing.
1 x Romaine Lettuce
1 x punnet of cherry tomatoes
1 x red onion
1 x orange pepper
1 x lemon
250ml plain vegan yoghurt
Salt and Pepper to taste
6 x wooden skewers soaked in water for 30 minutes
Cook burger mix as per pack instructions.
- Preheat the oven according to package instructions and prepare a baking tray with greaseproof paper.
- Prepare the Profusion Burger Mix according to packet instructions, but do not shape into burgers. Instead, shape the mix around the skewers, squeezing fairly firmly with your hand so that the mix sticks to the skewer.
- Once all 6 have been made, pop in the oven on the prepped baking tray for 5 minutes less than packet instructions, turning over halfway through.
- Whilst the koftas are cooking, make your salad by chopping up all the ingredients how you desire and place in a serving bowl.
- Once koftas are cooked, place on the salad and drizzle over some vegan yoghurt and enjoy!
